Instead, organic farms rely on natural methods: shade-growing under a canopy of native trees, composting organic matter back into the soil, rotating crops to maintain soil health, and using natural pest control methods like introducing beneficial insects.

Inspectors visit the farms, test the soil, review farming records, and verify that the entire supply chain — from farm to processing to roasting — maintains organic integrity. Why We Chose Organic & Fair Trade
When we opened specialTEA Lounge on Coral Way in 2009, we already had the tea program figured out. Premium loose leaf teas sourced from reputable gardens around the world. But coffee was a question mark. Miami runs on cafecito and coladas, and we knew we needed a coffee program that could hold its own in a city that takes its coffee seriously.
We partnered with a local Florida roaster who shares our values. Every batch of beans is USDA organic and fair trade certified. The roasting happens right here in our region, which means fresher coffee with a smaller carbon footprint than beans roasted across the country and shipped in.
From seed to cup, we know where our beans come from and who grew them. That traceability is not just a talking point — it is the foundation of a coffee program we can stand behind with confidence. When a customer at our Coral Way location asks about our coffee, we can tell them exactly where it was grown, how it was farmed, and who roasted it.
French Press vs. Cold Brew: How We Brew
Great beans deserve great brewing methods. At specialTEA Lounge, we focus on two methods that let the quality of organic coffee shine through without any shortcuts.
French press is our signature hot coffee method. Coarsely ground beans are steeped in hot water for four minutes, then pressed through a metal mesh filter. Unlike paper filters, the metal mesh allows the coffee's natural oils to pass through into your cup. The result is a full-bodied, rich brew with depth and complexity that drip coffee cannot match. French press coffee has texture — you can feel it on your palate.
Cold brew is our go-to for iced coffee lovers, and it is worth understanding why it tastes so different from regular iced coffee. We steep coarsely ground beans in cold water for over 16 hours. This slow extraction produces a concentrate that is remarkably smooth, naturally sweet, and significantly less acidic than hot-brewed coffee. The extended steeping time also extracts a higher caffeine concentration, so cold brew packs more punch ounce for ounce.
Both methods share a philosophy: let the beans speak for themselves. No paper filters stripping out flavor compounds. No rushing the process. Just time, water, and quality organic coffee.

- Cold Brew Palmer — Half cold brew, half fresh-squeezed mint lemonade. This is a house favorite and one of the most refreshing drinks on our menu. The coffee's natural sweetness pairs surprisingly well with the citrus and mint. Perfect for Miami afternoons.
All of our signature lattes are available with your choice of milk and flavor: brown sugar, organic vanilla, organic caramel, organic hazelnut, coconut, and dulce de leche. Yes, even our flavor syrups are organic where available.
